WHere is an easy interpretation of a cocktail from a new drinks list. It's a party-sized prepared mix that's loaded with flavours of the festive period, which makes it perfect for a celebration. Any leftover syrup to use in breakfast cocktails, puddings, or to mix more rounds of this cocktail.
Bikini Recipe
Serves 10 people
For the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Place the listed items inside a pan, bring to a gentle boil, agitating to dissolve. Then, turn off the burner and leave to cool down entirely. Transfer into an sealable bottle, close it and store chilled, where it will keep for about four weeks.
For the Premix: Mix every liquid ingredients in a big jug, leave to sit for 60 minutes, then filter it , ideally through muslin, making it completely strained.
When ready to serve: Pour 85ml of your batch mix to a stirring glass containing ice, and agitate carefully for one minute to cool it down. Filter to a chilled martini glass or similar, top with a few cranberries and complete it using a quick spritz of mandarin oil above the glass.
